Banoffee Pie

Indulgent home made banoffee pie. Perfect for parties and BBQ's, and a great way to use up ripe bananas.

Servings 23 cm springform tin

Ingredients
  

Base

  • 450 g chocolate hobnobs
  • 150 g unsalted butter

Caramel/toffee

  • 100 g Dark muscavado sugar Must be dark brown sugar
  • 100 g unslated butter
  • 397 g condensed milk one can

Topping

  • 2 large bananas
  • 568 ml double or whipping cream 2 cartons
  • 1 tspn vanilla essence
  • 1 tspn vanilla paste
  • 2 pieces dark chocolate

Instructions
 

  • Take you packet(s) of chocolate hobnobs and hit hard on the worktop before opening. Tip the broken biscuits into a large mixing bowl and crush into fine crumbs using the end of a rolling pin.
  • Melt the butter in a mug in the microwave for 10-30 seconds (depending on whether it is chilled or at room temperature).
  • Pour the melted butter into the mixing bowl with the chocolate hobnob crumbs and mix well.
  • Line your springform tin with parchment, then pour the base mixture in.
  • With the back of a dessert spoon, smooth the mixture out so that it covers the base and is roughly 1 cm thick. Push the mixture up the sides slightly, so the base has a lip of approx 1cm.
  • Place in the fridge to chill during the next steps.

Caramel

  • Place the butter and sugar in a saucepan on a medium heat and continue stirring until the sugar starts to dissolve.
  • Slowly add the condensed milk and continue to stir. Do not leave the pan unattended. Stir gently and constantly until the caramel starts to thicken.
  • Take the caramel from the heat, do not be tempted to lick the spoon! The caramel mixture will be very hot.
  • Pour the caramel over the biscuit base and smooth out evenly. Then place back in the fridge during the next steps.

Topping

  • Pour the cream, vanilla essence and paste into a large mixing bowl and whisk with an electric whisk until stiff and fluffy.
  • Peel, and cut the bananas into slices (roughly 0.5-1cm thick).
  • Layer the slices of banana over the banoffee base, and then spread the whipped cream on top.
  • To finish grate dark chocolate over the banoffee pie.

Notes

I've also made this into individual banoffee tarts, using pre-made shortcrust tart cases. You can find these easily in most supermarkets and they also make a great contribution towards BBQs and parties over the summer.

Young Love

I first made this recipe for my now husband around 11 years ago when I'd just got into baking. I remember taking it to his house, with anticipation at how it would be received. But being thrilled that it didn't even last a day because not only him, but his whole family, and his friend who lived next door loved it!

Over the years it's developed into a recipe I don't even need to look up, with some tweaks from the original along the way.

No baking involved

I love this recipe because there's no baking involved. There's also the added bonus that much like the choux bun recipe I posted recently, it's perfect for summer BBQ's and parties.

  1. Mmmmmmm, i haven't had a decent bannoffee for years! We used to (very dangerously) boil the unopened can of milk to make the caramel, but it was darn good fun!

  3. Ok - confession time. I've never had a banoffee pie before. I'm from Canada and hadn't heard of it until I moved here a few years ago, but have still yet to try one! Seems easy enough to make though. I'll have to give yours a go!

    1. No problem, I love the video! Never realised you could use nuts as an alternative for cheesecake. Such a good idea!
